Cooking with the Land: Inside the Maori Hangi Tradition

The Moment the Earth Opens

At first, there is only a patch of earth. Then the covering is drawn back, the baskets begin to rise and a cloud of steam escapes into the air. After hours beneath the ground, the food is finally revealed: meat made tender by slow cooking, vegetables softened by heat and moisture, and an aroma shaped by fire, stone, soil and time.

This is the moment most visitors remember. Yet a hāngī begins long before the earth is opened, and its meaning cannot be understood by looking only at the finished plate. Someone has selected and heated the stones. People have prepared the kai, organised the baskets, managed the fire and sealed the pit. Knowledge has been shared, work divided and guests considered. The meal is the visible result of a much larger collective effort.

For our family, the story comes with moving pictures as well as memory. During a 2023 family trip through Aotearoa New Zealand, we visited Mitai Māori Village in Rotorua and watched a hāngī being lifted from the ground. Our short video catches the part Geo still talks about: baskets full of chicken, pork, potatoes and kūmara emerging through a rush of steam. Watching it again brought back the music, the dancing, the dark forest and the excitement of that evening.

This article follows that idea into the ground. What exactly is a hāngī? How did an earth-oven tradition carried across the Pacific adapt to the cooler lands of Aotearoa? Why do the stones matter? What belongs in a hāngī, and what has changed over time? Most importantly, what can families learn when they approach this living Māori tradition with curiosity and respect?


First, What Is a Hāngī?

A hāngī is both an earth oven and, in everyday use, the food cooked within it. Te Aka Māori Dictionary defines it as an earth oven that cooks food with steam and the heat of heated stones. The related word umu also means an earth oven. Similar cooking technologies are found across the Pacific under different names, but hāngī is a Māori word for a Māori practice in Aotearoa. Those related traditions share an ancient technological family; they should not be collapsed into one interchangeable “Polynesian experience.”

The basic principle is ingenious. A shallow pit is prepared, stones are heated in a fire, and food is layered above the hot stones. Moist coverings and water help create steam. Earth seals the oven, holding in heat while the food cooks slowly for several hours. The exact materials, sequence, foods and timing can vary according to place, available resources, the number of people being fed and the knowledge of those preparing it.

That variation matters. There is no single frozen hāngī recipe belonging equally to every iwi, hapū or whānau. Tikanga, local knowledge and practical methods differ. A responsible explanation can describe the shared cooking principle without claiming that every Māori community prepares or understands hāngī in precisely the same way.

One Ocean, Many Earth Ovens — Different Traditions

Geo’s hāngī was not our family’s first encounter with food cooked beneath the ground. Many years earlier, I joined a day excursion in Guam where our hosts had prepared an earth oven beside the beach. The food was perfectly cooked and the setting made the meal unforgettable. CHamoru sources describe the chåhan as an earth oven in which food is covered with heated stones and leaves. That connection helps us recognise a shared Pacific technology, but it would not be accurate to rename the Guam experience a Māori hāngī.

More recently, at a lūʻau in Maui, the showstopper was the pig that had been cooked in the ground. In Hawaiʻi, that underground oven is an imu, and pork prepared in it is commonly served as kālua pig. Again, the family resemblance is visible: fire, heated stones, plant material, trapped heat, steam and patient cooking. Yet chåhan, imu and hāngī belong to distinct peoples, places, languages and living traditions. Learning the right name is a small but important act of respect.

Knowledge Carried Across the Pacific

The ancestors of Māori were expert ocean voyagers from East Polynesia. When they reached Aotearoa in the late thirteenth century, they brought plants, technologies and systems of knowledge from their tropical homelands. Earth-oven cooking was part of that inheritance. Archaeological sites across Aotearoa preserve traces of early umu and hāngī, while traditional Māori cookery later centred on earth ovens of different sizes for different foods.

Arrival did not mean simply repeating life in Polynesia. Aotearoa was cooler, larger and ecologically different. Several tropical food plants struggled outside the warmest areas. Kūmara became especially important, but it required new ways of cultivating and storing it through cold seasons. Māori also learned the possibilities of a land rich in fish, shellfish, birds, fern root, berries and other foods. Cooking knowledge travelled, then changed through close observation of a new environment.

The size of an earth oven depended on its work. Te Ara records that large ovens could cook joints of moa or seal, while smaller ovens were suitable for fish or kūmara. Other foods were grilled over embers, roasted on spits, dried, fermented or preserved in fat. Hāngī was therefore a central technology, but never the only way Māori prepared kai.

The foods placed in hāngī also changed after contact with Europeans. Potatoes, pumpkins, carrots and cabbage joined crops already grown or gathered. Pigs, sheep, cattle and chickens introduced new meats. Today, many people associate hāngī with combinations such as pork, lamb or chicken with potato, kūmara, pumpkin, stuffing and cabbage. Those meals are traditional in the sense that generations have made them meaningful, even though several ingredients arrived after European contact. Tradition is not the same as being unchanged.

How a Hāngī Works

The method looks simple when reduced to its layers: fire, stones, food, wet coverings and earth. In practice, success depends on judgement at every stage. People who know how to put down a hāngī read the stones, the fire, the weather, the quantity of food and the behaviour of the steam. The layers can be drawn, but judgement comes from experience.

1. Preparing the pit and the fire

A hāngī uses a shallow pit rather than the metre-deep hole sometimes described in tourist summaries. Its size and shape depend on how much food must be cooked. A fire is built to heat carefully selected stones. In some methods the fire burns in the pit; in others the stones are heated nearby and transferred. The practical aim is the same: create a stable mass of stored heat that can be sealed beneath the food.

2. Choosing stones that can survive the heat

Not every rock is safe. Water trapped inside some stones can turn rapidly to steam and cause them to crack or explode when heated. Te Ara notes that volcanic rocks were particularly suitable and that greywacke was also used. Good hāngī stones could be valued and even gifted because their ability to withstand repeated heating made them important working resources.

3. Preparing and layering the kai

Once the stones are hot and the fire has burned down, embers are cleared or arranged according to the method being used. Food is placed in baskets above the stones. Te Ara describes meat going in before vegetables in a contemporary layered hāngī. Historically, leaves and woven flax matting could form part of the covering system; today, wire baskets, foil, cloth and sacking are common practical adaptations. The materials have changed, but the essential task remains trapping heat and moisture around the food.

4. Creating steam and sealing the oven

Water and damp coverings help produce steam. The pit is then covered with earth so that heat does not escape. This stage requires speed and care. Gaps leak steam; too much disturbance can lose heat; and the amount of food changes how long the oven must remain closed. A mound of soil may look still from the outside, but beneath it heat is moving through the baskets while moisture circulates around the kai.

5. Waiting, uncovering and serving

The hāngī cooks for several hours. There is no universal three-, four- or six-hour rule because the oven, stones, weather and load are not universal. When it is time to lift the food, the soil and coverings are removed carefully so that dirt does not fall into the baskets. Steam rises, baskets emerge and the work of preparation becomes a shared meal.

The Science Beneath the Soil

A hāngī is a powerful lesson in heat transfer. The fire first transfers energy into the stones. Because suitable stones have a high thermal mass, they store that energy and release it gradually after the flames have gone. The hot stones warm the air, the baskets and the water around them. Water becomes steam, and that moving moisture carries heat across the food. The earth and coverings slow the loss of heat to the outside environment.

This combination is why hāngī food is neither simply roasted nor boiled. Radiant and conducted heat come from below, while hot moist air surrounds the food. Slow cooking softens tough meat and allows dense vegetables to cook through. Smoke from the original fire and the materials used around the oven can also influence aroma, although the familiar “hāngī flavour” depends on the particular method rather than one guaranteed taste.

Rotorua: When Geology Joins the Kitchen

Rotorua is one of the places most closely associated with visitor hāngī experiences, but it also demonstrates why regional context matters. Across much of Aotearoa, stones are heated by a wood fire. In geothermal areas around Rotorua, Māori communities have also used naturally heated ground and steam for cooking over many generations. Geothermal cooking is therefore a real and important regional practice, not a feature of every hāngī everywhere.

The landscape makes the lesson visible. Steam rises from vents, hot pools reveal energy close to the surface, and the earth itself becomes part of everyday technology. At places such as Te Puia, visitors can learn about geothermal landscapes alongside Māori arts, culture and kai. Other Rotorua experiences, including Mitai Māori Village and Te Pā Tū, centre different histories, hosts and styles of sharing. Families should look beyond a generic “Māori village” label and ask who owns and leads the experience, whose stories are being shared, and how the visit supports the people and place represented.

Our Family Hāngī Experience at Mitai

Our hāngī memory belongs to a 2023 family journey through Aotearoa. We arrived at Mitai Māori Village by bus and were ushered into the dining hall, where our assigned seats waited for the meal later that evening. Before dinner, our guides took us outside to watch the hāngī being raised and uncovered. Geo remembers how cool it was to see the baskets appear through the steam, full of chicken, pork, potatoes and kūmara. Our ten-second video is brief, but it makes the heat and anticipation wonderfully real.

From there, we followed our guides through lush rainforest to the bank of the Wai-o-Whiro stream. It was dark, and everyone found a place along the riverbank. Loud calls came through the forest before eight warriors appeared in a slow-moving waka, paddling past in traditional attire as flaming torches lit the water. Our footage preserves the full atmosphere: the calls carrying through the forest, the slow approach of the waka and the hush and excitement of the waiting crowd.

After the waka passed, we moved to the performance area for an evening of cultural learning. Geo especially loved the music and the movement of the poi, which remain among his clearest memories of that evening. The performance also gave us a doorway into older ways of living and the knowledge that supported survival—an introduction shared by our hosts, rather than a complete account of all Māori life.

Then it was time to return to the dining hall for a full buffet hāngī dinner. The meal connected the baskets we had just seen with the work and knowledge explained throughout the evening. Our visit ended back in the forest, looking for glow-worms—a final, quiet contrast to the firelight, steam, music and paddling that had filled the night.

A family also arrives with responsibilities. Cultural learning is not something visitors simply consume. It asks us to listen, notice protocol, pronounce names with care, understand that kapa haka is not one single “dance,” and remember that one evening can introduce a culture without containing all of it. No tourism program can represent every iwi, hapū, whānau or Māori viewpoint. A good experience opens a door; it does not make us experts.

More Than a Cooking Method

Hāngī is often described as “more than food,” but that phrase only becomes meaningful when we explain why. Earth ovens are especially effective for feeding large groups. Large meals require planning, labour and cooperation. The work may involve gathering fuel, preparing stones, peeling and cutting vegetables, arranging baskets, managing the oven, setting tables and serving guests. Knowledge moves through participation: younger people learn by watching, helping and gradually taking responsibility.

Food also sits within manaakitanga, a word that includes hospitality, generosity, care and respect for others. Te Ara describes hospitality through food as longstanding in the Māori world and notes that the way visitors are fed can express the mana of the hosts. This does not mean every hāngī is a formal ceremony, nor that the oven itself should always be called sacred. It means the preparation and sharing of kai can carry social relationships and responsibilities that are larger than the cooking technique alone.

Hāngī continues to be prepared for hui, tangihanga, celebrations, fundraisers, festivals, whānau gatherings and other occasions. Some are put down in traditional earth pits; some use modern baskets and coverings; urban communities have adapted ovens to different spaces; and geothermal areas have their own methods. Continuity is visible not because every detail remains unchanged, but because people continue to use, teach and adapt the knowledge.

What Might Be on the Plate?

A modern hāngī plate often combines meat and vegetables that respond well to long, moist cooking. Pork, lamb, chicken or beef may appear alongside potato, kūmara, pumpkin, cabbage and stuffing. Steamed pudding and other desserts are common at some contemporary feasts. Fish and seafood also have deep histories in Māori foodways and may be included, although the exact menu depends on region, occasion and host.

It is useful to separate “traditional method” from “unchanged ancient menu.” Before Europeans arrived, Māori cooked foods available in Aotearoa, including fish, birds, kūmara and other cultivated or gathered kai. Potatoes and pigs arrived later and were rapidly adopted. Today’s hāngī can therefore hold multiple periods of food history in one basket: a Polynesian earth-oven technology, ingredients brought by Māori ancestors, foods found in Aotearoa and ingredients introduced through later contact.

The result is not less authentic because history continued. Culture is lived in the present. What matters is being precise about which elements are ancient, which were adopted later and how communities have made them their own.

How Families Can Experience a Hāngī Respectfully

For travelling families, the best starting point is a Māori-led experience that identifies its people, place and purpose. Rotorua offers several established options, including Mitai Māori Village, Te Puia and Te Pā Tū. The Waitangi Treaty Grounds in the Bay of Islands also offers a seasonal hāngī and concert program. Experiences, prices and inclusions change, so families should check official websites rather than relying on an old travel list.

A marae, meanwhile, should not be treated as a restaurant or a sightseeing stop. A marae is a communal and cultural place connected to its people. Some welcome visitors through organised programs, invitations or events; others are not public attractions. When invited, follow the guidance of hosts, respect local tikanga and remember that protocols vary.

Children often learn best when they know what to notice. Before the visit, ask them to listen for the names of the iwi or hapū connected with the experience. Watch how guests are welcomed and how the hosts explain the meal. Notice whether the hāngī uses fire-heated stones or geothermal steam. After eating, talk about who completed the work that made the meal possible. These questions shift attention from “trying unusual food” to understanding people, process and place.


Can We Make a Hāngī at Home?

An oven, slow cooker or covered barbecue can produce tender meat and vegetables, but it does not turn the meal into a hāngī. The earth oven, heated stones, steam seal, knowledge and collective process are not decorative details; they are the method. Calling an indoor tray bake a “family-friendly hāngī” erases the very technology we are trying to understand.

Families can still bring the learning home honestly. Cook kūmara, pumpkin and meat slowly, then describe the dish as hāngī-inspired rather than a hāngī. Build a safe model of the oven layers from paper or clay. Compare hāngī with related earth ovens across the Pacific, such as umu, imu and lovo, while learning the correct cultural and geographic context for each. The goal is not to copy a tradition without its knowledge holders; it is to remember the lesson and keep asking better questions.

Across the Pacific, earth ovens share a basic principle: stones are heated and their stored heat is trapped around food. How each oven is built and used, however, reflects a distinct cultural tradition. A contemporary Māori hāngī commonly lowers food baskets into a covered pit; a Hawaiian imu generally uses a deeper pit with wrapped food layered over hot stones; a Sāmoan umu is usually built above ground on heated stones and covered with leaves; and the traditional CHamoru chåhan of Guåhan uses a covered earth pit. Each method has developed around local foods, materials, community knowledge and cultural meaning, so these are related traditions rather than different names for the same oven.

What We Brought Home

Some travel memories fit easily into a suitcase. This one did not. We did not return to Sydney ready to dig a hāngī pit in the garden, and an oven or slow cooker could not reproduce the method honestly. What we brought home was knowledge: a clearer understanding of Māori culture, a new way of seeing the relationship between food and collective work, and a vivid lesson in how geology can shape everyday life.

Geo later drew on what he had learned in school project work and presentations. Rotorua’s steaming ground helped make geothermal energy more than a definition in a textbook. The hāngī connected that science to heat transfer, natural materials, adaptation and the knowledge people build through generations of observing a place.

Bringing the world home does not always mean reproducing what we ate. Sometimes it means recognising what cannot be copied casually, remembering the people who taught us and carrying the learning into a completely different part of life. In this case, the meal became schoolwork, questions, conversations and a deeper respect for Aotearoa New Zealand.

What the Hāngī Leaves With Us

When the earth is opened and the baskets are lifted, the food may disappear quickly. The knowledge behind it has lasted across centuries of movement and change. Polynesian voyagers carried earth-oven technology across the ocean. Māori adapted it to the climate, stones, plants and foods of Aotearoa. New ingredients arrived, cities grew and tools changed, yet people continued to put down hāngī for gatherings, celebrations and times when many mouths needed to be fed.

For Geo, the lesson arrived during a family trip, on a plate shared with us in Rotorua. It became one of those travel memories that keeps unfolding after the journey is over. The hāngī teaches through taste, but also through physics, geography, history and hospitality. Look beneath the meal and you find a story of knowledge carried, adapted and shared.
